Spring Foraged Supper

You’re invited to Chef Robin’s home kitchen to for a one day only pop-up dinner celebrating spring.  Chefs Bruno Feldeisen and Brent Thornton (Good Thief/St.Lawernce) are creating a wild spring inspired six course dinner at Swallow Tail’s underground supper club.  Chef Robin will have harvested wild ingredients for the chefs to work with like spring prince mushrooms, stinging nettle and labrador tea.

• Spring salmon tartare, spring pea, stinging nettle, aji amarillo
• Lamb crepinette, pommes fondant, BC urchin, conifer, prince mushroom infused lamb jus
• Profiterole, labrador tea, chantilly, salted mugolio (conifer syrup) caramel

Meet the Chefs:
Chef Bruno Feldeisen, award winning pastry chef, restaurateur, author, and judge on CBC’s The Great Canadian Baking Show, is a first generation Frenchman, born in the small town of Clermont-Ferrand, Bruno Feldeisen and raised by his Italian grandmother and German grandfather. He has been featured in the New York Times, Los Angeles Times, Gourmet Magazine, Bon Appetit Magazine and New York Magazine. Chef Feldeisen has multiple television appearances including Chopped, Beat Bobby Flay, Doughnut Showdown and Sweet Genius.

Chef Brent Thornton’s resume includes some of the top restaurants in Vancouver; St.Lawrence, Good Thief, Is that French and currently he is the chef de cuisine of Elem Vancouver.  His dishes are elegant, French leaning creations, beautifully plated (you eat with your eyes first, right:).
