Guest chef Zach Cross-Nadeau will be cooking up a six course supper to celebrate spring mushroom season. Morels are the king of spring mushrooms with an earthy, meaty flavour and a firm texture. Chef will be stuffing them, frying them and baking them to make them even more delicious.

Wild Pickles + Bread & Butter
Sea asparagus, flowering currant pickled turnip, magnolia pickled beets. Bread by Tommy’s Whole Grain

Stuffed Fire Morels
Glazed Morels stuffed with Caramelized Onions, Confit Garlic, Chilli Crisp, Cilantro

BC Hazlenut & Leek
White Wine Poached Leeks Aburi, Toasted Hazelnuts, Cured Egg Yolk

Morels & Handmade Udon
Morel Spruce-tip Dashi, Halibut, Peas

Char Sui + Morel XO
HK style Crispy pork belly, Morel XO sauce, Bok choy

Morel Sticky Toffee Pudding with stinging nettle ice cream

Location:  Swallow Tail underground supper club is one of a kind dining  long table experience where you’re invited to Chef Robin’s home kitchen to dine in Vancouver. It’s a relaxed atmosphere where you will meet our team who are devoted to creating foraging focused long table dinners in the city.  Secret location will be given upon booking.
