Chefs Robin Kort and Chelseah Compton unite their creative talents to bring you a wild and wonderful Christmas dinner.
Rule #1 – There ain’t no turkey on this menu! Chefs will be weaving their cultural Christmas traditions into the menu, hand harvesting some unique ingredients, and basically turning Xmas dinner on it’s head. Eight courses + our sommeliers juniper, fig leaf spiked mulled wine for your dining pleasure. Long table seating at a secret location in Mount Pleasant. BYOB, wine pairing list available upon request.
THE MENU
- Golden crab consume smoked salmon, daikon, yu choy, matsutake chili, wood ear
- Fondant potatoes- orange and cinnamon braised carrots, chestnut, pickled cranberry, mushroom jus
- Xmas green & red tuna tartar, huckleberry soy ginger vinegar, smoked popweed, fig sticky rice, wild wakame, pea shoot, butter lettuce cups
- Bison stuffed brussel sprouts – cheese, pancetta crumble, herb aioli
- Lechon- charred scallion, saffron rice, red chili sauce, green chimi
- Seared duck w juniper marmalade, escarole salad or (upgrade to) Stuffed whole Red rock crab upgrade with yuzu chili butter
- Desert pasta – chocolate mascarpone filling, thimbleberry sauce, edible sweet rocks
