At the Swallow Tail Supper Club our home kitchen, our kick-ass Filipino Canadian chef Chelseah Compton will cook her way into your heart. Chef Chelseah has been cooking as a house chef at Swallow Tail for years and her food is always addictive along with amazing precision plating.  Her food style is distinctive: Asian influenced, comfort food loving, sometimes with a little kick or perfect zing.  It’s hard to describe, but her dishes are never forgotten.

Japanese carbonara – creamy rice, aioli,
Cured egg yolk, pancetta

Croquettes stuffed with pulled pork, cheeses, hoisin bbq sauce

Scallop carpaccio, chive oil, sesame, crispy shallot, yuzu pearls

Lamb stuffed braised onions, lamb ragu, mozzarella, red wine sauce

Malfatti – ricotta, spinach, Parmesan, fresh basil, candied tomato sauce, Crispy chicken skin butter

Prawns wrapped in crispy phyllo dough , pickled mushrooms, Asian herb salad
